INGREDIENTS

5 medium red snapper fish, halved.

5 medium tomatoes

5 scotch bonnet pepper

5 cloves of garlic, minced.

1 small ginger, grated.

1 tsp cloves

1 tsp fresh thyme

1 medium red onion, sliced.

3 tbsp fish powder

1 shrimp seasoning cube

Palm oil

Salt

DIRECTION

• Blend tomatoes, scotch bonnet pepper, garlic, ginger, thyme, cloves, water and blend into a smooth mixture.
• Heat palm oil in a saucepan over medium heat, add onion, stir and let sweat for a minute, add blended mixture, stir and let simmer down for 3 minutes.
• Add fish powder, shrimp seasoning, salt, stir and let simmer then add red snapper.
• Cover and allow to cook for 5 minutes.
