Easy Lentil Soup with a Shiitake Mushroom base!

1/2 cups of lentils, I used brown lentils.
7 cups of water, add more if necessary
2 garlic cloves
1 onion wedge
1-1/2 tsp of salt, more to taste
1/8 tsp cumin powder
1/4 tsp white pepper
Sprigs of fresh Cilantro
3 carrots, sliced
3/4 heaping cup of dry Shiitake Mushroom Powder
(Blend dry Shiitake Mushrooms until you have a powder cosistency)

In a large pot over a low-medium flame, add water, Shiitake mushroom powder, garlic cloves, onion wedge, lentil and fresh cilantro sprigs.

*Optional, add dry whole mushrooms – they will cook and soften in the broth. Or if you prefer you can add fresh mushrooms.

Cover your pot, allow to simmer for 25 minutes. Then add the slices of carrots.
This is a good time to make adjustments.
*Add more water if needed, adjust salt and seasonings to taste.

Cook for a total of 40-45 minutes or until the lentils are tender and the carrots are cooked through.

*Remove the garlic cloves and onion wedge before serving.

Serve with slices of avocado, chopped cilantro and onion ­čĺÜ
