Pineapple Mango Salsa is simple to make yet it serves as a great side dish or topping. After preparing, place in a glass container and store in the fridge for future use.

1 cup of spring onions (scallions)
1 small white or yellow onion chopped
1 thumb of ginger chopped fine or grated
1 vine ripe tomato chopped and seeds removed
1/3 of a pineapple chopped into small pieces
1/2 bunch of cilantro chopped fine
1 cup of chopped cucumbers with seeds removed
1 1/2 cups of chopped mango
1/4 cup of lemon juice
2 tbsp of seasoning sea salt (or any organic sea salt mix)
1 tsp of coriander

Optional ingredients:
1/4 cup of coconut aminos
1 scotch bonnet pepper chopped fine and seeds removed.
