Chris De La Rosa from shares a brilliant recipe for making taro (dasheen) with stewed salted fish aka (salted cod or saltfish) as it’s done in the Caribbean, especially his native Trinidad and Tobago.

Here’s how to prepare salted fish for cooking:

You’ll Need…

2-3 lbs taro (dasheen)
1/4 teaspoon salt
water for boiling the taro

2 medium tomatoes
3 scallions
1/4 scotch bonnet pepper
2 cloves garlic
3 sprigs thyme
3-5 tablespoon olive oil
pinch black pepper
1 onion
1 cup shredded saltfish (salted cod)
