INGREDIENTS
100g smoked tuna, flaked.
¾ cup Chilli Powder
400g Tomato Paste
2 medium Onions
1 cup Ginger, chopped.
1 bulb Garlic
1 tsp anise seeds ( nkitekite)
3 yammia seeds
2 cubes Shrimp seasoning
½ tsp Rosemary
500ml Oil
1 tsp Salt
DIRECTION
– Pour smoked tuna into a bowl and flake with fork into smaller
pieces.
– Pour oil into saucepan over medium heat , add flaked tuna and fry
until golden brown for 10 minutes
– Add tomato paste, stir and let cook for 8-10 minutes.
– Blend ginger, onions, garlic, anise seeds, yammia and pour mixture
into the sauce, stir and let simmer down for 15-20 minutes, stirring
occasionally then add more oil.
– Add chilli powder, stir then let simmer for 5 minutes.
– Add shrimp seasoning, rosemary, salt , stir and let simmer for 5
minutes
– Shito sauce ready.
