Sweet Potato Hamburger Buns
Makes 18 small hamburger buns
INGREDIENTS (US)
8oz sweet potato , 1″ cubes
water to cook potatoes
2 1/4 teaspoons dry yeast (instant or traditional)
2 tablespoons finely ground flax seed (preferably freshly ground from whole seeds)
4 cups all-purpose flour*
1 tablespoon brown sugar
1 teaspoon sea salt
Optional topping:
1 tablespoon maple syrup
1 tablespoons water
1 teaspoon sesame seeds
INGREDIENTS (Metric)
225g sweet potato, 2.5cm cubes
water to cook potatoes
11cc dry yeast (instant or traditional)
30cc finely ground flax seed (preferably freshly ground from whole seeds)
500g all-purpose flour*
15 cc brown sugar
5 cc sea salt
Optional topping:
15ml maple syrup
15ml water
5cc sesame seeds
* the amount of flour is a rough estimate. The amount of liquid in the potato mash will vary so you need more or less flour because of this.
